- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish or line with parchment paper.
- In a bowl, combine 1 cup flour and 1/4 cup powdered sugar. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 15-18 minutes, or until lightly golden.
- While the crust bakes, whisk together eggs, granulated sugar, 2 tablespoons flour, baking powder, lime juice, and lime zest in a separate bowl until smooth.
- Pour the lime filling over the hot crust and return to oven.
- Bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles.
- Cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar and cut into bars.
Notes
- Chill the bars before slicing for cleaner edges.
- Add a bit of green food coloring for a vibrant lime appearance if desired.
- Use key limes for a more intense citrus flavor.
