Description
A light, flavorful, zero‑point soup from Weight Watchers featuring cabbage and a medley of veggies in a savory broth.
Ingredients
- 3 cups nonfat beef broth (or vegetable/chicken broth, reduced sodium)
- 2 garlic cloves, minced
- 1 Tbsp tomato paste
- 2 cups chopped cabbage
- ½ yellow onion, chopped
- ½ cup chopped carrot
- ½ cup green beans
- ½ cup chopped zucchini (green or yellow)
- ½ tsp dried basil
- ½ tsp dried oregano
- Salt & pepper, to taste
Instructions
- Spray a pot with nonstick cooking spray and sauté the onions, carrots, and garlic for about 5 minutes.
- Add the broth, tomato paste, cabbage, green beans, basil, oregano, salt, and pepper. Stir well.
- Simmer 5–10 minutes, until vegetables begin to soften.
- Add zucchini and simmer another 5 minutes, until all vegetables are tender.
- Customize with additional veggies or seasonings as desired, then serve hot.

- Feel free to double veggies like green beans or add others such as spinach or mushrooms.
