Description

A light, flavorful, zero‑point soup from Weight Watchers featuring cabbage and a medley of veggies in a savory broth.


Ingredients

  • 3 cups nonfat beef broth (or vegetable/chicken broth, reduced sodium)
  • 2 garlic cloves, minced
  • 1 Tbsp tomato paste
  • 2 cups chopped cabbage
  • ½ yellow onion, chopped
  • ½ cup chopped carrot
  • ½ cup green beans
  • ½ cup chopped zucchini (green or yellow)
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt & pepper, to taste


Instructions

  1. Spray a pot with nonstick cooking spray and sauté the onions, carrots, and garlic for about 5 minutes.
  2. Add the broth, tomato paste, cabbage, green beans, basil, oregano, salt, and pepper. Stir well.
  3. Simmer 5–10 minutes, until vegetables begin to soften.
  4. Add zucchini and simmer another 5 minutes, until all vegetables are tender.
  5. Customize with additional veggies or seasonings as desired, then serve hot.

Notes
