Ingredients
Scale
Beef and Seasoning
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
Stew Base
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Vegetables
- 3 large carrots, sliced
- 3 medium Yukon gold potatoes, cubed
- 2 celery stalks, sliced
- 1 small onion, chopped
- 1 cup frozen peas
Instructions
- Coat the Beef: Toss the beef cubes with flour, salt, black pepper, and garlic powder until evenly coated for added flavor and to help thicken the stew.
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat and brown the beef on all sides in batches, about 3 to 4 minutes per batch. This develops rich flavors. Transfer the browned beef to the crockpot.
- Combine Ingredients in Crockpot: Add beef broth, tomato paste, Worcestershire sauce, minced garlic, dried thyme, and rosemary to the slow cooker. Stir gently to combine with the beef.
- Add Vegetables: Incorporate the sliced carrots, cubed potatoes, celery, and chopped onion into the crockpot.
- Slow Cook: Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender and the vegetables are fully cooked.
- Add Peas: Stir in frozen peas during the last 20 minutes of cooking to retain their color and texture.
- Adjust Seasoning and Serve: Taste the stew and adjust seasoning if needed before serving hot.
Notes
- For a thicker stew, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it in during the last 30 minutes of cooking.
- Browning the beef adds extra depth of flavor but can be skipped if short on time.
- Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
