Description

Veggie Lo Mein is a quick and flavorful Chinese-inspired noodle dish made with stir-fried vegetables and a savory sauce. Perfect for a healthy weeknight dinner.


Ingredients

  • 8 oz lo mein noodles
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup snow peas
  • 1/4 cup green onions, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce (optional for vegetarian)
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce (if using), sugar, and red pepper flakes. Set aside.
  3. Heat sesame oil and vegetable oil in a large pan or wok over medium-high heat.
  4. Add garlic and ginger and sauté for 30 seconds until fragrant.
  5. Add broccoli, bell pepper, carrot, and snow peas. Stir-fry for 4-5 minutes until tender-crisp.
  6. Add cooked noodles and the sauce to the pan. Toss everything together and stir-fry for another 2-3 minutes until well combined and heated through.
  7. Garnish with green onions and serve hot.

Notes

  • Use tamari for a gluten-free version.
  • Feel free to substitute with any vegetables you have on hand.
  • For added protein, toss in tofu or tempeh.
