Instructions

  1. Heat the oil and soften onions: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Add garlic: Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Cook root vegetables: Add sliced carrots, celery, and diced potatoes to the pot. Cook for about 5 minutes, stirring occasionally to slightly soften the vegetables.
  4. Add other vegetables: Stir in diced zucchini, yellow squash, green beans, corn, and peas, combining them evenly with the other ingredients.
  5. Incorporate liquids and herbs: Pour in the diced tomatoes with their juice and vegetable broth. Add dried thyme, basil, oregano, salt, and pepper. Stir well to combine all the flavors.
  6. Simmer soup: Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 25-30 minutes, or until all the vegetables are tender and the flavors meld.
  7. Adjust and serve: Taste the soup and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with freshly chopped parsley for a burst of color and freshness.
