These Vegan Valentine Peanut Butter Cups are a sweet and thoughtful treat, combining creamy peanut butter and rich dark chocolate in a heart-shaped delight perfect for sharing love.

- 1 cup natural peanut butter
- 1/4 cup maple syrup
- 1/4 cup coconut flour
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 1/2 cups dairy-free dark chocolate chips
- 1 tbsp coconut oil
- Heart-shaped silicone molds
Instructions
- In a bowl, mix peanut butter, maple syrup, coconut flour, vanilla extract, and salt until a dough forms.
- Press small portions of the peanut butter mixture into heart-shaped molds, filling them halfway. Freeze for 15 minutes.
- Melt the dark chocolate chips with coconut oil over a double boiler or in the microwave in 30-second increments until smooth.
- Remove molds from freezer and spoon melted chocolate over the peanut butter layer to fill the molds completely.
- Tap the molds to remove air bubbles and smooth the tops.
- Freeze the filled molds for at least 30 minutes or until fully set.
- Pop the peanut butter cups out of the molds and store them in the fridge until ready to serve.
Notes
- Use mini paper liners if you don’t have silicone molds.
- You can substitute almond butter if preferred.
- Store in the refrigerator for up to 2 weeks or freeze for longer shelf life.
