Description

A colorful and fun dessert, Unicorn Poke Cake is a vibrant vanilla cake infused with pastel-colored pudding, topped with whipped topping and sprinkles, perfect for birthdays and celebrations.


Ingredients

  • 3 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 (3.4 oz) box instant vanilla pudding
  • 2 cups milk
  • Food coloring (pink, blue, purple)
  • 1 tub (8 oz) whipped topping, thawed
  • Assorted unicorn-themed sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Prepare the white cake mix according to package directions using eggs, water, and oil.
  3. Pour the batter into the prepared baking dish and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool slightly, then use the handle of a wooden spoon to poke holes evenly across the cake.
  5. In a bowl, whisk together the pudding mix and milk until smooth and slightly thickened.
  6. Divide the pudding into 3 bowls and tint each with a different food coloring (pink, blue, purple).
  7. Spoon the colored pudding into the holes of the cake, alternating colors to create a rainbow effect.
  8. Spread the whipped topping evenly over the cake.
  9. Decorate with unicorn-themed sprinkles.
  10. Refrigerate for at least 2 hours before serving.

Notes

  • For a more vibrant color, use gel food coloring.
  • Let the cake chill thoroughly to help the pudding set well.
