- 3 roma tomatoes, diced
- ½ cup diced red onion
- 1 avocado, diced
- â…“ cup sour cream
- ¼ cup roughly chopped fresh cilantro leaves
Instructions
- Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain any excess fat to avoid greasy nachos.
- Season the Beef: Add the taco seasoning and ¼ cup of water to the skillet with the beef. Stir well and cook for 2-3 minutes until the beef is thoroughly seasoned and flavorful.
- Heat the Beans: In a small saucepan, warm the refried beans with ¼ cup water, stirring occasionally until the mixture is smooth and heated through.
- Preheat Oven: Set your oven to 400°F (200°C) to get it ready for baking the nachos.
- Assemble Nachos: Spread the tortilla chips evenly on a large baking sheet. Evenly distribute the seasoned beef, warmed refried beans, and shredded cheese over the chips.
- Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted, bubbly, and golden in spots.
- Add Pickled Jalapenos: Remove the nachos from the oven and sprinkle the pickled jalapenos over the top for a spicy, tangy kick.
- Finish with Fresh Toppings: Top the nachos with diced roma tomatoes, red onion, avocado, sour cream dollops, and chopped fresh cilantro for brightness and texture.
- Serve: Serve the nachos immediately while warm and gooey, perfect for sharing and enjoying right away.
Notes
- Use a mix of cheddar and Monterey Jack cheese for the best melt and flavor combination.
- Drain excess beef fat to keep the nachos from becoming greasy.
- Adjust the amount of pickled jalapenos according to your spice preference.
- For a vegetarian version, substitute ground beef with cooked black beans or lentils and skip the taco seasoning or use a vegetarian version.
- Bake the nachos on a rimmed baking sheet to catch any melted cheese or toppings that may drip.
