Ingredients
For the Casserole:
- 1 pound breakfast sausage
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cups frozen hash browns, thawed
- 1 ½ cups shredded cheddar cheese, divided
- 8 large eggs
- 1 cup whole milk
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the Sausage: In a large skillet over medium heat, cook the sausage until browned and fully cooked. Remove and set aside.
- Sauté Vegetables: In the same skillet, sauté the onion and bell peppers until soft.
- Prepare Egg Mixture: In a bowl, whisk eggs, milk, garlic powder, salt, and pepper. Add sausage, vegetables, hash browns, and 1 cup of cheese. Mix well.
- Assemble and Bake: Pour the mixture into the baking dish. Top with remaining cheese. Bake for 40–45 minutes until set and golden.
- Rest and Serve: Let it rest for 5–10 minutes before slicing. Garnish with parsley if desired.
