Description

A hearty and comforting turkey noodle soup made with tender turkey, vegetables, and egg noodles simmered in a flavorful broth.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken or turkey broth
  • 2 cups cooked turkey, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  2. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Pour in the broth and bring to a boil.
  4. Add the shredded turkey, thyme, parsley, salt, and pepper. Reduce heat and simmer for 10 minutes.
  5. Add the egg noodles and cook according to package directions, about 8-10 minutes, until tender.
  6. Stir in lemon juice if using, adjust seasoning, and serve hot.

Notes

  • Use leftover Thanksgiving turkey for a quick meal.
  • For a richer flavor, simmer the soup longer before adding noodles.
  • You can substitute egg noodles with rice or other pasta.
