Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in onion, garlic, and bell pepper. Cook until vegetables are softened.
  4. Add tomato paste and stir for 1 minute.
  5. Add diced tomatoes, tomato sauce, chicken broth, black beans, and kidney beans.
  6. Season with chili powder, cumin, paprika, oregano, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
  8. Adjust seasoning as needed and serve hot.

Notes

  • For a spicier chili, add a chopped jalapeño or extra chili powder.
  • Chili tastes even better the next day after flavors meld.
  • Serve with toppings like avocado, cheese, sour cream, or cilantro.
