Description

Tuna cucumber boats are a light and refreshing low-carb snack or meal featuring crisp cucumber halves filled with a flavorful tuna salad mixture.


Ingredients

  • 2 large cucumbers
  • 1 (5 oz) can tuna, drained
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped fresh dill (optional)
  • Salt and pepper to taste
  • 1 teaspoon lemon juice


Instructions

  1. Wash the cucumbers and cut them in half lengthwise. Scoop out the seeds using a spoon to create a boat-like shape.
  2. In a bowl, combine the tuna, mayonnaise, Dijon mustard, red onion, dill (if using), lemon juice, salt, and pepper. Mix well.
  3. Fill each cucumber boat with the tuna mixture, pressing down slightly to ensure it stays in place.
  4. Serve immediately or refrigerate for 10–15 minutes to chill before serving.
