Description

Tortitas de Papa are delicious Mexican potato patties, crispy on the outside and soft inside, perfect for a comforting meal or side dish.


Ingredients

  • 4 large potatoes, peeled and chopped
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup grated cheese (optional)
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
  • Oil for frying


Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash.
  2. In a large bowl, combine mashed potatoes, eggs, flour, cheese (if using), parsley, salt, and pepper. Mix until well combined.
  3. Form the mixture into small patties.
  4. Heat oil in a skillet over medium heat.
  5. Fry the patties in batches until golden brown on both sides, about 3-4 minutes per side.
  6. Remove and drain on paper towels.
  7. Serve hot with your favorite salsa or dipping sauce.

Notes

  • For extra flavor, add chopped green onions or minced garlic to the potato mixture.
  • Use a non-stick skillet for easier frying.
  • These tortitas can also be baked at 400°F (200°C) until golden for a healthier version.
