Tortitas de Papa are delicious Mexican potato patties, crispy on the outside and soft inside, perfect for a comforting meal or side dish.

- 4 large potatoes, peeled and chopped
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 cup grated cheese (optional)
- 1/4 cup chopped fresh parsley
- Salt to taste
- Black pepper to taste
- Oil for frying
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash.
- In a large bowl, combine mashed potatoes, eggs, flour, cheese (if using), parsley, salt, and pepper. Mix until well combined.
- Form the mixture into small patties.
- Heat oil in a skillet over medium heat.
- Fry the patties in batches until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve hot with your favorite salsa or dipping sauce.
Notes
- For extra flavor, add chopped green onions or minced garlic to the potato mixture.
- Use a non-stick skillet for easier frying.
- These tortitas can also be baked at 400°F (200°C) until golden for a healthier version.
