Ingredients
Scale
Sausage and Vegetables
- 4 Italian sausage links (sweet or spicy)
- 1 tablespoon olive oil
- 1 small red onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
Sandwich Assembly
- 4 crusty sandwich rolls or ciabatta buns
- ½ cup marinara or sun-dried tomato spread
- 1 cup shredded mozzarella or provolone cheese
- 1 teaspoon dried Italian herbs
- Fresh basil or arugula (optional, for topping)
Instructions
- Cook the Sausage: In a skillet over medium heat, cook the sausages for 10–12 minutes, turning occasionally until browned and cooked through. Remove the sausages and let rest for a few minutes, then slice them diagonally to prepare for layering.
- Sauté the Vegetables: Using the same skillet, heat olive oil and add the sliced onions and bell peppers. Sauté for 6–8 minutes until they are soft and lightly caramelized. Add the minced garlic and cook for an additional minute. Season the mixture with dried Italian herbs to enhance the flavor.
- Prepare the Rolls: Preheat your broiler or toaster oven. Slice the sandwich rolls in half. Optionally, toast the rolls lightly under the broiler or toaster oven to add crispness and a warm texture.
- Assemble the Sandwiches: Spread a spoonful of marinara or sun-dried tomato spread on the bottom half of each roll. Layer the sliced sausage on top, followed by the sautéed peppers and onions. Sprinkle the shredded mozzarella or provolone cheese evenly over the fillings.
- Melt the Cheese: Place the open-faced sandwiches under the preheated broiler for 1–2 minutes, just until the cheese melts and becomes bubbly. Be careful not to burn the bread or toppings during this step.
- Add Fresh Toppings and Serve: If using, top the melted sandwiches with fresh basil or arugula leaves. Close the sandwiches with the top roll halves and serve immediately, accompanied by chips, salad, or roasted potatoes for a complete meal.
Notes
- Use chicken sausage for a lighter version of this sandwich.
- For added smoky flavor, you can grill the sausages and vegetables instead of sautéing.
- To make it vegetarian, substitute sausage with plant-based sausage alternatives and ensure the cheese is vegetarian-friendly.
- Adjust the spice level by choosing sweet or spicy Italian sausages according to your preference.
