Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


Instructions

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, shredded carrots, feta cheese, and black olives.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad just before serving.
