Ingredients
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 cup shredded carrots
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, shredded carrots, feta cheese, and black olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad just before serving.
- Toss gently to coat all the ingredients evenly.
- Serve immediately and enjoy!
Notes
- You can add grilled chicken or shrimp for extra protein.
