Description

A classic Thai hot and sour soup made with shrimp, aromatic herbs, and flavorful spices, offering a perfect balance of spicy, sour, salty, and savory flavors.


Ingredients

  • 8 cups water
  • 1 lb shrimp, peeled and deveined
  • 3 stalks lemongrass, cut into 2-inch pieces and smashed
  • 5 slices galangal
  • 5 kaffir lime leaves, torn
  • 1 cup mushrooms, halved
  • 3 Thai chilies, crushed
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 1 small tomato, cut into wedges
  • Fresh cilantro, for garnish

Instructions

  1. Bring water to a boil in a large pot.
  2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. Add mushrooms, tomato, and crushed chilies. Cook for 3-4 minutes.
  4. Add shrimp and cook until they turn pink, about 2-3 minutes.
  5. Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning if needed.
  6. Remove from heat and garnish with fresh cilantro before serving.

  • Adjust the number of chilies according to your spice tolerance.
  • Substitute chicken or tofu for shrimp if desired.
