- 8 cups water
- 1 lb shrimp, peeled and deveined
- 3 stalks lemongrass, cut into 2-inch pieces and smashed
- 5 slices galangal
- 5 kaffir lime leaves, torn
- 1 cup mushrooms, halved
- 3 Thai chilies, crushed
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1 small tomato, cut into wedges
- Fresh cilantro, for garnish
Instructions
- Bring water to a boil in a large pot.
- Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
- Add mushrooms, tomato, and crushed chilies. Cook for 3-4 minutes.
- Add shrimp and cook until they turn pink, about 2-3 minutes.
- Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning if needed.
- Remove from heat and garnish with fresh cilantro before serving.

- Substitute chicken or tofu for shrimp if desired.
