Chicken and Vegetables
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil, divided
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas or sliced carrots
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger (optional)
Teriyaki Sauce
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 teaspoon sesame oil
Instructions
- Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, water, and sesame oil. Set aside to be used later in cooking.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the bite-sized chicken pieces and cook for 5 to 7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Stir-Fry the Vegetables: Add the remaining 1 tablespoon of oil to the skillet. Stir-fry the broccoli florets, sliced red bell pepper, and snap peas (or sliced carrots) for 4 to 5 minutes or until the vegetables are crisp-tender. Add the minced garlic and grated fresh ginger, and stir-fry for an additional 30 seconds to infuse flavor.
- Combine Chicken and Sauce: Return the cooked chicken pieces to the skillet with the vegetables. Stir the reserved teriyaki sauce mixture again and pour it over the chicken and vegetables in the skillet.
- Thicken the Sauce: Cook everything together, stirring frequently, for about 2 to 3 minutes until the sauce thickens and evenly coats the chicken and vegetables.
- Serve: Serve the teriyaki chicken and vegetables hot over steamed rice or noodles. Optionally, garnish with sesame seeds or chopped green onions for added flavor and presentation.
