Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 4 cups sweet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft, about 5 minutes.
  3. Stir in garlic, ginger, cumin, and cinnamon; cook for 1 minute until fragrant.
  4. Add sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until sweet potatoes are tender.
  5. Use an immersion blender or transfer to a blender to purée the soup until smooth.
  6. Stir in coconut milk and season with salt and pepper. Heat through.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

  • For extra creaminess, add more coconut milk or a splash of cream.
  • Top with roasted chickpeas or croutons for added texture.
  • This soup freezes well and can be stored for up to 3 months.
