- 1 cup graham cracker crumbs
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 12 mini chocolate candies or berries (e.g., raspberries or mini peanut butter cups)
- Pinch of salt
Instructions
- Preheat oven to 325°F (163°C) and line a mini muffin pan with paper liners.
- Mix graham cracker crumbs, 2 tbsp sugar, and melted butter until combined.
- Press about 1 tsp of crust mixture into each muffin cup and press down firmly. Bake for 5 minutes, then set aside to cool slightly.
- In a bowl, beat cream cheese until smooth. Add 1/2 cup sugar, vanilla extract, and salt, then mix until creamy.
- Add eggs one at a time, mixing just until combined.
- Place one candy or berry into the center of each muffin cup on top of the crust.
- Pour cheesecake batter over each until 3/4 full, covering the surprise center.
- Bake for 15-18 minutes until centers are set. Let cool completely, then chill in the refrigerator for at least 2 hours.
- Remove liners and serve chilled.
Notes
- You can use any small candy or berry as the surprise center.
- For best texture, allow the bites to chill overnight.
- Top with whipped cream or drizzle with chocolate for extra flair.
