- 2 tbsp tequila (optional)
- 1/4 cup whole milk
- 1/2 cup finely diced strawberries
- 1/2 cup finely diced mango
- 1/2 cup unsalted butter (for frosting)

- 1/4 cup strawberry puree (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla, lime juice, tequila (if using), and milk.
- Gradually add dry ingredients to wet, mixing just until combined.
- Fold in diced strawberries and mango.
- Scoop batter into liners, filling about 2/3 full.
- Bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely.
- To make the frosting, beat butter until smooth. Gradually add powdered sugar, lime juice, strawberry puree, and tequila (if using), beating until fluffy.
- Frost cooled cupcakes and garnish with lime zest or fruit pieces if desired.
Notes
- Tequila is optional and can be omitted for a kid-friendly version.
- Use ripe, fresh fruit for the best flavor and texture.
- Refrigerate frosted cupcakes if not serving immediately, but allow to come to room temperature before eating.
