Description

Strawberry Lemon Blondies are moist, chewy dessert bars infused with fresh strawberries and tangy lemon flavor, perfect for spring or summer treats.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped fresh strawberries
  • 1 tbsp all-purpose flour (for coating strawberries)
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter and sugar until smooth.
  3. Add eggs, lemon juice, and lemon zest. Mix well.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. Toss the chopped strawberries in 1 tbsp of flour to prevent sinking, then gently fold them into the batter.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  9. In a small bowl, whisk powdered sugar and lemon juice to make the glaze.
  10. Drizzle the glaze over the cooled blondies, let set, then cut into squares and serve.

Notes

  • Use fresh strawberries for best results, as frozen ones can make the blondies soggy.
  • Adjust lemon juice and zest to taste for more or less tanginess.
  • Store in an airtight container at room temperature for up to 3 days.
