- 1 cup unsalted butter, melted
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup chopped fresh strawberries
- 1 tbsp all-purpose flour (for coating strawberries)
- 1 cup powdered sugar (for glaze)
- 2 tbsp lemon juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix melted butter and sugar until smooth.
- Add eggs, lemon juice, and lemon zest. Mix well.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Toss the chopped strawberries in 1 tbsp of flour to prevent sinking, then gently fold them into the batter.
- Spread the batter evenly into the prepared pan.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- In a small bowl, whisk powdered sugar and lemon juice to make the glaze.
- Drizzle the glaze over the cooled blondies, let set, then cut into squares and serve.
Notes
- Use fresh strawberries for best results, as frozen ones can make the blondies soggy.
- Adjust lemon juice and zest to taste for more or less tanginess.
- Store in an airtight container at room temperature for up to 3 days.
