- 2 pounds fresh strawberries, hulled
- 4 cups granulated sugar
- 1/4 cup lemon juice (freshly squeezed)
Instructions
- Wash, hull, and halve the strawberries.
- In a large bowl, combine strawberries, sugar, and lemon juice. Let sit for 30 minutes to macerate.
- Transfer the mixture to a large saucepan and bring to a boil over medium heat, stirring frequently.
- Reduce heat and simmer for 20–30 minutes, stirring often and skimming foam if needed, until mixture thickens.
- Test for doneness by placing a small amount on a cold plate; if it wrinkles when pushed, it’s ready.
- Remove from heat and let cool slightly.
- Transfer jam to sterilized jars and seal. Refrigerate or process in a water bath for long-term storage.
Notes
- You can mash the strawberries for a smoother texture or leave chunks for a rustic finish.
- Store in the refrigerator for up to 3 weeks or process jars to store for up to a year.
- Adjust sugar to taste or use pectin if reducing sugar significantly.
