Description

These sweet and flaky Strawberry Hand Pies are filled with juicy strawberry filling and baked to golden perfection. Perfect for picnics, parties, or just a fun dessert, they’re easy to make with simple ingredients and can be enjoyed warm or at room temperature.


Ingredients

For the filling:

  • 2 cups fresh strawberries, hulled and chopped

  • 1/4 cup granulated sugar

  • 1 tbsp cornstarch

  • 1 tsp lemon juice

  • 1/2 tsp vanilla extract

For the dough:

  • 2 1/2 cups all-purpose flour

  • 1 tbsp granulated sugar

  • 1 tsp salt

  • 1 cup unsalted butter, cold and cubed

  • 1/2 cup ice water

For assembly:

  • 1 egg (for egg wash)

  • 1 tbsp water

  • Optional: coarse sugar for sprinkling


Instructions

  1. Make the filling:
    In a saucepan over medium heat, combine strawberries, sugar, cornstarch, lemon juice, and vanilla. Cook for 6–8 minutes until the mixture thickens. Let cool completely.

  2. Make the dough:
    In a large bowl, mix flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your hands until it resembles coarse crumbs. Add ice water a tablespoon at a time until the dough comes together. Divide into two disks, wrap in plastic, and chill for 30 minutes.

  3. Assemble the pies:
    Preheat oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8-inch thickness. Cut into 4–5 inch circles or rectangles. Place 1–2 tablespoons of strawberry filling in the center of half the pieces. Top with remaining dough pieces and press edges to seal with a fork.

  4. Bake:
    Place pies on a parchment-lined baking sheet. Whisk egg and water together for the egg wash and brush over the tops. Sprinkle with coarse sugar if using. Cut a small slit in the top of each pie to vent.

  5. Bake for 20–25 minutes, or until golden brown. Cool on a wire rack before serving.


Notes

  • You can use store-bought pie dough for a quicker version.

  • Frozen strawberries work in place of fresh—just thaw and drain them first.

  • These hand pies can be frozen before or after baking.
