Description

Strawberry Crumb Bars are a sweet and buttery treat layered with fresh strawberries and topped with a golden crumb topping, perfect for dessert or a snack.


Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar (for filling)
  • 2 teaspoons cornstarch
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish or line with parchment paper.
  2. In a large bowl, mix 1 cup sugar, baking powder, flour, and salt. Add the cold butter and cut it in using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add the egg and vanilla extract to the crumb mixture and stir until combined. The dough will be crumbly.
  4. Press half of the dough into the bottom of the prepared baking dish to form the crust.
  5. In another bowl, mix the chopped strawberries with 1/3 cup sugar and cornstarch. Spread the strawberry mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the strawberry layer.
  7. Bake for 40-45 minutes or until the top is golden and the filling is bubbly.
  8. Cool completely before cutting into bars. Dust with powdered sugar before serving, if desired.

Notes

  • Substitute frozen strawberries (thawed and drained) if fresh aren’t available.
  • Try adding lemon zest to the filling for extra brightness.
  • Store in an airtight container for up to 3 days at room temperature or 5 days in the fridge.
