Instructions
- Blend the base: In a blender, combine the strawberries, almond milk, maple syrup, and vanilla extract. Blend until smooth to create a creamy strawberry mixture.
- Combine chia seeds: Pour the blended mixture into a bowl or jar and stir in the chia seeds thoroughly to ensure even distribution.
- Initial rest: Let the mixture sit for 5 minutes so the chia seeds begin to absorb the liquid and swell; then stir again to break up any clumps and prevent gelatinous pockets.
- Chill: Cover the bowl or jar and refrigerate for at least 4 hours or preferably overnight, allowing the pudding to thicken to a smooth, pudding-like texture.
