Ingredients
Scale
Filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup diced strawberries
Wrapping & Frying
- 12 eggroll wrappers
- Oil, for frying (about 2 cups, enough to submerge eggrolls)
- Cinnamon sugar, for sprinkling
Instructions
- Prepare filling: In a bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and well combined, creating a creamy base for the filling.
- Add strawberries: Gently stir in the diced strawberries to the cream cheese mixture, distributing the fruit evenly throughout the filling.
- Fill eggroll wrappers: Lay out an eggroll wrapper on a clean surface and place a spoonful of the cream cheese and strawberry filling in the center of each wrapper.
- Roll eggrolls: Fold the sides of the wrapper over the filling, then roll it up tightly from one edge to enclose the filling completely, sealing the edges as needed to prevent leakage.
- Heat oil: Pour enough oil into a pan to cover the eggroll bites and heat it over medium heat until shimmering and hot, ideal for frying.
- Fry eggroll bites: Carefully place the rolled eggroll bites into the hot oil and fry each side for about 2-3 minutes until they are golden brown and crispy.
- Drain excess oil: Remove the fried eggroll bites from the oil and place them on paper towels to absorb any excess oil and keep them crisp.
- Add cinnamon sugar: Sprinkle cinnamon sugar over the warm eggroll bites just before serving to add a sweet and aromatic finishing touch.
Notes
- Make sure the cream cheese is softened to room temperature for easier mixing and smoother filling.
- Press the eggroll wrappers tightly to seal edges to prevent filling from leaking during frying.
- You can substitute powdered sugar with granulated sugar if needed, but powdered sugar provides a smoother texture.
- Serve immediately for best texture, as eggrolls lose crispness over time.
- Use fresh, ripe strawberries to enhance the flavor of the filling.
