Description

A savory and slightly sweet grilled chicken dish topped with a fresh strawberry bruschetta mixture for a unique and refreshing twist on classic bruschetta.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup fresh strawberries, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey (optional)
  • 2 cloves garlic, minced

Instructions

  1. Preheat grill or grill pan over medium heat.
  2. Brush chicken breasts with olive oil and season with salt and pepper.
  3. Grill chicken for 6–7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  4. While chicken is grilling, in a bowl combine diced strawberries, basil, garlic, balsamic vinegar, and honey (if using). Mix gently.
  5. Once chicken is done, let it rest for a few minutes before placing on a serving plate.
  6. Spoon the strawberry bruschetta mixture over the chicken.
  7. Drizzle with balsamic glaze just before serving.

  • Can be served warm or at room temperature.
