Cheesy Rotini in Garlic Parmesan Sauce

  • 10 oz rotini pasta
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • ½ cup reserved pasta water
  • ¼ tsp chili flakes (optional)
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the rotini pasta until just shy of al dente, about 8–9 minutes. Reserve ½ cup of the pasta water, then drain the pasta and set it aside.
  2. Prepare the steak: Pat the steak cubes dry using paper towels, then season evenly with salt, freshly ground black pepper, and smoked paprika.
  3. Sear the steak bites: Heat olive oil in a cast iron skillet over medium-high heat. Add the steak bites in a single layer and sear them for about 2–3 minutes on each side until browned and cooked to your preferred doneness.
  4. Add aromatics to steak: In the last 30 seconds of cooking, add butter, minced garlic, and crushed red pepper flakes to the skillet. Toss the steak bites to coat them in the flavorful mixture. Remove from heat and let the steak rest.
  5. Sauté garlic for the sauce: In a clean skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds, taking care not to burn it.
  6. Create the sauce: Pour heavy cream into the skillet and bring it to a gentle simmer. Gradually whisk in the freshly grated parmesan cheese until the sauce is smooth and creamy.

  8. Toss pasta in sauce: Add the cooked rotini pasta to the sauce and toss well to coat. Let it simmer for 1–2 minutes so the pasta absorbs the flavors of the sauce.
