Steak Bakes are delicious British-inspired savory hand pies made with finely diced steak, onions, garlic, and a flavorful gravy filling encased in golden, flaky puff pastry. Perfect as a main course or a hearty snack, these steak pasties are easy to prepare and bake to a perfect golden brown.

- 1 tablespoon olive oil
- 1/2 pound steak (sirloin or rump, finely diced)
- 1 small onion (finely chopped)
- 1 clove garlic (minced)
- 1 tablespoon all-purpose flour
- 1/2 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 teaspoon dried thyme (optional)

- 1 sheet puff pastry (thawed)
- 1 egg (beaten, for egg wash)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make clean-up easier.
- Cook Aromatics: In a skillet over medium heat, heat the olive oil. Add the finely chopped onion and cook for 2 to 3 minutes until softened. Then add the minced garlic and cook for an additional 30 seconds until fragrant.
- Brown the Steak: Add the finely diced steak to the skillet and cook for 4 to 5 minutes until the meat is browned on all sides.
- Thicken Filling: Stir in the flour to coat the steak and cook for 1 minute to remove the raw flour taste. Pour in the beef broth and Worcestershire sauce, then add the black pepper, salt, and thyme if using. Simmer the mixture for 2 to 3 minutes until it thickens into a gravy-like consistency. Remove from heat and let it cool slightly to make handling easier.
- Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface and cut into 4 equal rectangles.
- Assemble Bakes: Spoon the cooled steak filling onto one half of each pastry rectangle, leaving a small border around the edges. Fold the pastry over the filling to form a pocket and seal the edges by pressing with a fork.
- Add Vent and Egg Wash: Place the prepared bakes on the lined baking sheet. Cut small slits on top of each to allow steam to escape during baking. Brush the tops with the beaten egg to give them a beautiful golden color when baked.
- Bake: Bake in the preheated oven for 20 to 25 minutes or until the pastry is puffed and golden brown.
- Cool and Serve: Allow the steak bakes to cool slightly before serving so the filling sets and biting into them is comfortable.
Notes
- For extra richness, stir in a tablespoon of cream or shredded cheese into the filling before sealing the pastry.
- These steak bakes can be made ahead of time and frozen before baking. Bake directly from frozen, adding a few extra minutes to the baking time.
