Description

A hearty and comforting soup made with green split peas, vegetables, and flavorful seasonings, perfect for a nourishing meal.


Ingredients

  • 2 cups dried green split peas, rinsed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: diced smoked ham or vegan sausage

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent.
  3. Add carrots and celery and cook for another 5 minutes.
  4. Stir in the split peas, vegetable broth, bay leaf, and thyme.
  5. Bring the mixture to a boil, then reduce heat and simmer, covered, for about 60-70 minutes, stirring occasionally, until peas are tender.
  6. Remove the bay leaf and blend the soup partially if desired for a creamier texture.
  7. Season with salt and pepper to taste.
  8. Serve hot, optionally garnished with diced smoked ham or vegan sausage.

Notes

  • For a smoother texture, blend the soup completely using an immersion blender.
  • Adjust the thickness by adding more broth or water if necessary.
  • This soup freezes well for up to 3 months.
