A hearty and comforting soup made with green split peas, vegetables, and flavorful seasonings, perfect for a nourishing meal.
Ingredients
- 2 cups dried green split peas, rinsed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: diced smoked ham or vegan sausage
Instructions
- Rinse the split peas under cold water and set aside.
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent.
- Add carrots and celery and cook for another 5 minutes.
- Stir in the split peas, vegetable broth, bay leaf, and thyme.
- Bring the mixture to a boil, then reduce heat and simmer, covered, for about 60-70 minutes, stirring occasionally, until peas are tender.
- Remove the bay leaf and blend the soup partially if desired for a creamier texture.
- Season with salt and pepper to taste.
- Serve hot, optionally garnished with diced smoked ham or vegan sausage.
Notes
- For a smoother texture, blend the soup completely using an immersion blender.
- Adjust the thickness by adding more broth or water if necessary.
- This soup freezes well for up to 3 months.
