Description

  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 10 oz fresh spinach, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 7 oz feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 tablespoon lemon juice

  • 2 sheets frozen puff pastry, thawed
  • 1 egg, for egg wash


Instructions

  1. Preheat and Prepare Baking Sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 3 to 4 minutes. Then add minced garlic and cook for an additional minute to release the aroma.
  3. Cook Spinach: Add the chopped fresh spinach to the skillet and cook until wilted, stirring occasionally. Once cooked, remove from heat and allow the mixture to cool slightly before proceeding.
  4. Mix Filling Ingredients: Transfer the spinach mixture to a mixing bowl. Stir in salt, black pepper, nutmeg, crumbled feta, grated Parmesan cheese, beaten egg, fresh dill (if using), and lemon juice. Mix thoroughly to combine all flavors evenly.
  5. Prepare Puff Pastry: On a lightly floured surface, roll out each thawed puff pastry sheet slightly to even out the thickness. Cut each sheet in half lengthwise to create four rectangular pieces in total.
  6. Assemble Rolls: Divide the spinach and feta filling evenly along the long edge of each puff pastry rectangle. Carefully roll each rectangle tightly around the filling to form log shapes, ensuring the seam is on the bottom to seal well.
  7. Apply Egg Wash and Decorate: Place the rolls seam-side down on the prepared baking sheet. Brush the tops of the rolls with the beaten egg to give them a golden, glossy finish when baked. Optionally, lightly score the tops with a sharp knife for decoration.
  8. Bake: Bake in the preheated oven for 20–25 minutes or until the pastry is golden brown, puffed, and crisp.
