- ¼ lb. frozen chopped spinach
- Pinch of crushed red pepper flakes

- 4 slices bread
- 2 Tbsp butter
- 1 cup shredded mozzarella cheese
- 1 oz. feta cheese, crumbled
Instructions
- Sauté the spinach: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about one minute until fragrant. Add frozen chopped spinach directly into the skillet along with a pinch of salt and black pepper. Cook, stirring occasionally, until most of the moisture evaporates and spinach is tender.
- Prepare the bread: Spread butter evenly on one side of each bread slice. Place the bread butter-side down when assembling the sandwiches to ensure crispiness on the outside.
- Add cheese layer: Divide half of the shredded mozzarella cheese between two bread slices (butter side down). Sprinkle crumbled feta cheese evenly over the mozzarella.
- Add spinach and finishing cheese: Distribute the sautéed spinach evenly over the cheese layers on each sandwich. Top spinach with remaining shredded mozzarella and a pinch of crushed red pepper flakes for a subtle kick.
- Assemble the sandwiches: Place the second slice of bread on top of each sandwich, buttered side facing out.
- Cook the sandwiches: Heat a large skillet over medium-low heat. Carefully place the sandwiches on the skillet and cook for several minutes on each side, pressing gently, until the bread is golden brown and crispy and the cheese inside melts to a gooey consistency.
- Serve: Remove from skillet, cut sandwiches in half, and serve immediately while warm and melty.
