Description

Pan de Mallorca is a sweet, buttery Puerto Rican bread roll that’s incredibly soft and fluffy. These spiral-shaped buns are lightly sweetened, brushed with egg wash, and finished with a generous dusting of powdered sugar. They’re perfect for breakfast or an afternoon snack with coffee!


Ingredients

  • 3 1/2 cups all-purpose flour

  • 1 packet (2 1/4 tsp) active dry yeast

  • 1/3 cup granulated sugar

  • 3/4 cup warm milk (110°F)

  • 1/4 cup warm water (110°F)

  • 2 large eggs

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, softened (plus more for brushing)

 

  • Powdered sugar, for dusting


Instructions

  1. Activate the yeast: In a small bowl, mix the warm water, warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.

  2. Make the dough: In a large bowl, whisk together the flour and salt. Add in the yeast mixture, eggs, and softened butter. Mix until a dough forms.

  3. Knead: Knead the dough by hand or with a stand mixer for 8–10 minutes, until smooth and elastic.

  4. Let it rise: Place the dough in a greased bowl, cover it with a towel or plastic wrap, and let it rise in a warm place for 1–1½ hours, or until doubled in size.

  5. Shape the rolls: Roll out the dough on a lightly floured surface into a rectangle about ¼ inch thick. Brush with melted butter, then roll it up like a jelly roll. Slice into 1-inch pieces.

  6. Second rise: Place rolls on a parchment-lined baking sheet. Cover and let them rise again for 45 minutes to 1 hour.

  7. Bake: Preheat oven to 350°F (175°C). Brush the tops with egg wash (1 egg beaten with a splash of water) and bake for 15–18 minutes, or until lightly golden.

  8. Finish: Let cool slightly and dust generously with powdered sugar before serving.


Notes

  • You can make the dough the night before and let it rise in the fridge overnight for added flavor.

 

  • These rolls are best enjoyed fresh but can be reheated in the microwave for a few seconds the next day.
