- 1 lb smoked sausage, sliced
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 2 large sweet potatoes, peeled and cubed
- 4 cups kale, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned. Remove and set aside.
- In the same pot, sauté the onion until translucent. Add the garlic and cook for another minute.
- Pour in the chicken broth and water, and bring to a simmer.
- Add the sweet potatoes, smoked paprika, and red pepper flakes. Cook for 10-12 minutes or until the sweet potatoes are tender.
- Stir in the kale and cooked sausage. Simmer for another 5 minutes until the kale is wilted and tender.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use turkey sausage for a lighter option.
- Adjust spice level by modifying the amount of red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
