Description

A hearty and smoky soup made with sausage, kale, and sweet potatoes, perfect for a cozy, nutritious meal.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 large sweet potatoes, peeled and cubed
  • 4 cups kale, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté the onion until translucent. Add the garlic and cook for another minute.
  3. Pour in the chicken broth and water, and bring to a simmer.
  4. Add the sweet potatoes, smoked paprika, and red pepper flakes. Cook for 10-12 minutes or until the sweet potatoes are tender.
  5. Stir in the kale and cooked sausage. Simmer for another 5 minutes until the kale is wilted and tender.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • Use turkey sausage for a lighter option.
  • Adjust spice level by modifying the amount of red pepper flakes.
  • Store leftovers in an airtight container for up to 3 days.
