- 1 tbsp olive oil
- 12 oz smoked sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium sweet potatoes, peeled and cubed
- 6 cups chicken broth
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 4 cups chopped kale, stems removed
- 1 tbsp apple cider vinegar (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same pot, sauté onion and garlic until softened, about 3 minutes.
- Add sweet potatoes, smoked paprika, thyme, salt, and pepper. Stir to coat the vegetables in the spices.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until sweet potatoes are tender.
- Stir in chopped kale and cooked sausage. Simmer for an additional 5-7 minutes, until kale is wilted and sausage is heated through.
- Stir in apple cider vinegar if using, then taste and adjust seasoning as needed.
- Serve hot, optionally with crusty bread.
Notes
- For a spicier kick, use hot sausage or add red pepper flakes.
- This soup tastes even better the next day as the flavors meld.
- Substitute spinach for kale if preferred, but add it at the end to avoid overcooking.
