Description

A hearty and smoky soup featuring sausage, nutrient-rich kale, and sweet potatoes, perfect for a comforting and flavorful one-pot meal.


Ingredients

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 6 cups chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 4 cups chopped kale, stems removed
  • 1 tbsp apple cider vinegar (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3 minutes.
  3. Add sweet potatoes, smoked paprika, thyme, salt, and pepper. Stir to coat the vegetables in the spices.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until sweet potatoes are tender.
  5. Stir in chopped kale and cooked sausage. Simmer for an additional 5-7 minutes, until kale is wilted and sausage is heated through.
  6. Stir in apple cider vinegar if using, then taste and adjust seasoning as needed.
  7. Serve hot, optionally with crusty bread.

Notes

  • For a spicier kick, use hot sausage or add red pepper flakes.
  • This soup tastes even better the next day as the flavors meld.
  • Substitute spinach for kale if preferred, but add it at the end to avoid overcooking.
