Description

A hearty and flavorful soup that combines the classic taste of stuffed peppers with the ease of a slow cooker. Perfect for busy weeknights and comforting meals.


Ingredients

  • 1 lb ground beef
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 3 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup cooked white rice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Transfer the beef to the slow cooker.
  3. Add chopped bell peppers, onion, beef broth, diced tomatoes, tomato sauce, cooked rice, garlic, oregano, basil, salt, and black pepper.
  4. Stir to combine all ingredients well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Stir before serving and adjust seasoning if needed.

Notes

  • You can substitute ground turkey for a lighter option.
  • Add crushed red pepper flakes for a spicy kick.
