Description

Ingredients

For the Chicken:

  • 2 pounds boneless, skinless chicken thighs, cut into chunks
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

For the Sauce:

  • 1 (6-ounce) can tomato paste
  • 1 (15-ounce) can tomato sauce
  • 1 cup plain Greek yogurt
  • 1 cup heavy cream or coconut milk
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

For Garnish:

  • Fresh cilantro

Instructions

  1. Add ingredients to slow cooker: Combine chicken, onion, garlic, ginger, tomato paste, tomato sauce, yogurt, spices, salt, and pepper in the slow cooker.
  2. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  3. Finish: Stir in cream or coconut milk and butter during the last 20-30 minutes. Mix well and heat through.
  4. Serve: Enjoy hot over rice or with naan, garnished with cilantro.

Notes

  • You can use chicken breasts for a lighter option.
  • For a lighter version, use half-and-half instead of cream.
