Ingredients
For the Chicken:
- 2 pounds boneless, skinless chicken thighs, cut into chunks
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
For the Sauce:
- 1 (6-ounce) can tomato paste
- 1 (15-ounce) can tomato sauce
- 1 cup plain Greek yogurt
- 1 cup heavy cream or coconut milk
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
For Garnish:
- Fresh cilantro
Instructions
- Add ingredients to slow cooker: Combine chicken, onion, garlic, ginger, tomato paste, tomato sauce, yogurt, spices, salt, and pepper in the slow cooker.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
- Finish: Stir in cream or coconut milk and butter during the last 20-30 minutes. Mix well and heat through.
- Serve: Enjoy hot over rice or with naan, garnished with cilantro.
Notes
- You can use chicken breasts for a lighter option.
- For a lighter version, use half-and-half instead of cream.
