Ingredients
Scale
Protein and Aromatics
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Vegetables
- 2 cups peeled and diced potatoes
- 1 cup shredded carrots
- 1 can (10 oz) diced tomatoes with green chilies, undrained
Liquids and Dairy
- 3 cups beef broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- ¼ cup heavy cream
- 2 tablespoons butter
Spices and Thickeners
- ½ teaspoon paprika
- ½ teaspoon mustard powder
- ¼ teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (if using cornstarch slurry)
Instructions
- Cook the ground beef and aromatics: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain any excess grease. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Combine in the slow cooker: Transfer the cooked beef mixture into the slow cooker. Add the beef broth, diced tomatoes with green chilies (including the juice), peeled and diced potatoes, shredded carrots, paprika, mustard powder, salt, and black pepper. Stir all ingredients together until combined.
- Slow cook the soup: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes and carrots are tender when pierced with a fork.
- Add dairy and thicken if desired: About 30 minutes before serving, stir in the shredded cheddar cheese, milk, and heavy cream. If a thicker consistency is preferred, mix the cornstarch with water to create a slurry and stir it into the soup. Add the butter for extra richness.
- Finalize the soup texture: Cover and continue cooking the soup on low for another 20 to 30 minutes, stirring occasionally. This allows the cheese to melt completely and the soup to thicken to a creamy consistency.
- Serve and garnish: Ladle the soup into bowls and top with optional garnishes such as chopped pickles, crumbled bacon, or toasted burger bun croutons to enhance the cheeseburger flavor experience.
Notes
- Top with chopped pickles, crumbled bacon, or toasted burger bun croutons for fun burger vibes.
- Use Velveeta cheese instead of cheddar for extra meltiness and creamier texture.
- Ground turkey can be substituted for beef for a leaner version of the soup.
