Description

This Skinny Taco Dip is a light, flavorful appetizer perfect for parties or casual gatherings. Combining fat-free refried beans, light sour cream, and fresh veggies, this layered dip is a healthier twist on traditional taco dip, offering all the classic flavors with fewer calories. Ready in minutes and served chilled, it’s ideal for a crowd and pairs perfectly with tortilla chips or fresh vegetables.

Ingredients

Scale

Dip Base

  • 14 oz fat-free refried beans
  • 16 oz light sour cream (or Greek yogurt)
  • 1 tbsp ranch dressing mix

Toppings

  • 2 cups shredded lettuce
  • 1.5 cups grated cheddar cheese
  • 1 cup chopped tomatoes
  • 2 green onions, chopped
  • 6 oz sliced olives
  • 1 avocado, cubed

Instructions

  1. Spread Beans: Evenly spread the 14 oz of fat-free refried beans in the bottom of a 9 x 13-inch baking dish to create the base layer of the dip.
  2. Prepare Sour Cream Mixture: In a medium bowl, combine 16 oz light sour cream (or Greek yogurt) with 1 tbsp ranch dressing mix. Stir until smooth and well incorporated, then pour this mixture evenly over the refried beans layer.
  3. Layer Toppings: On top of the sour cream mixture, layer 2 cups shredded lettuce, 1.5 cups grated cheddar cheese, 1 cup chopped tomatoes, 2 chopped green onions, 6 oz sliced olives, and lastly, 1 cubed avocado, arranging them evenly across the dish.
  4. Chill Dip: Cover the dish with plastic wrap or a lid and refrigerate for at least one hour. This chilling step allows the flavors to meld and the dip to firm up slightly for easier serving.
  5. Serve: Remove from fridge and serve the dip cold alongside tortilla chips or fresh vegetables as dippers for a crowd-pleasing appetizer.

Notes

  • For a tangier alternative, substitute light sour cream with plain Greek yogurt.
  • If you prefer a spicier dip, add a dash of hot sauce to the sour cream mixture.
  • To keep the avocado from browning, toss cubed avocado with a little lime juice before layering.
  • Can be prepared a few hours ahead for convenience; just add avocado topping right before serving for best freshness.
  • This dip is naturally gluten free but always check ranch mix ingredients to ensure no gluten-containing additives.
