Description

A refreshing and healthy Shrimp Avocado Salad packed with vibrant flavors, tender shrimp, creamy avocado, and crisp vegetables, perfect for a light meal or side dish.

Ingredients

Units Scale
  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper to make the dressing.
  3. Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocado.
  4. Adjust seasoning if necessary and serve immediately or chill in the refrigerator for 10-15 minutes before serving.

Notes

  • Use freshly cooked shrimp for the best flavor.
  • Serve with tortilla chips for a fun twist.
  • You can add cucumber or corn for extra crunch and sweetness.
