Instructions

  1. Prepare the Grits Base: In a saucepan, bring water and milk to a simmer. Whisk in the grits and salt, stirring frequently for 5–7 minutes until thickened. Remove from heat and stir in shredded sharp cheddar cheese and unsalted butter until smooth and creamy.
  2. Form Grits Bites: Spoon the grits into a lightly greased mini muffin tin or silicone mold, using about 1 tablespoon per cavity. Smooth the tops evenly. Refrigerate for at least 1 hour until the grits firm up and are easy to handle.
  3. Sear the Grits Cakes: Once firm, carefully remove each grits round from the mold. Heat a skillet over medium heat with a little oil and sear the grits cakes for 1 to 2 minutes per side until they develop a golden, crisp crust. Set aside on a plate.
  4. Cook the Shrimp: Using the same skillet, heat olive oil or butter over medium heat. Add minced garlic and cook briefly until fragrant. Add the shrimp and season with smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for 2 to 3 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.
  5. Assemble and Serve: Top each crisp grits cake with one cooked shrimp. Garnish with chopped green onions or parsley for a fresh, vibrant finish. Serve the bites warm for best flavor and texture.
