Chicken Marinade

  • 2 tablespoons cornstarch

  • 2 cups scallions, chopped (separated into white and green parts)
  • 4 tablespoons vegetable oil


Instructions

  1. Prepare the Chicken: In a bowl, combine the chicken pieces with soy sauce, dark soy sauce, oyster sauce, black pepper, and cornstarch. Mix well to ensure chicken is evenly coated. Let the chicken marinate for 10 minutes to absorb the flavors. Meanwhile, chop the scallions carefully, keeping the white parts and green parts separate.
  2. Pan Fry the Chicken: Heat vegetable oil in a non-stick skillet over medium heat. Add the marinated chicken, spreading it out evenly. Cook the chicken, stirring occasionally to brown all sides, until it is fully cooked through and no longer pink inside, about 6 to 8 minutes.
  3. Add the Scallions: Stir in the white parts of the scallions into the skillet with the chicken. Sauté together for 2 to 3 minutes until the scallions soften and release their aroma. If the chicken pieces are larger, cover the pan during this step to help cook the chicken thoroughly.
  4. Finish the Dish: Add the green parts of the scallions last, tossing them with the chicken for 10 to 20 seconds to retain their bright color and fresh flavor.
  5. Serve: Optionally season with extra black pepper to taste. Serve the scallion chicken hot, ideally accompanied by steamed rice or noodles for a complete meal.
