Description

This savory breakfast sausage and cheese casserole is a hearty and satisfying way to start your day. Packed with crumbled sausage, gooey cheese, and fluffy eggs, it’s perfect for feeding a crowd or meal prepping for the week. Just assemble, bake, and enjoy a warm, comforting breakfast anytime.


Ingredients

  • 1 pound breakfast sausage (pork or turkey)

  • 6 large eggs

  • 2 cups whole milk

  • 1 1/2 cups shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 6 cups cubed day-old bread (French or sourdough works great)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 tablespoons chopped fresh parsley (optional for garnish)

  • Nonstick cooking spray or butter (for greasing the dish)


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.

  2. In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Drain excess grease and set aside.

  3. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.

  4. Add the cubed bread to the bowl and gently mix to coat the bread.

  5. Stir in the cooked sausage, cheddar, and mozzarella cheese.

  6. Pour the mixture into the prepared baking dish and spread evenly.

  7. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden brown.

  8. Let it rest for 5–10 minutes before slicing. Garnish with fresh parsley if desired.


Notes

  • You can assemble this casserole the night before and refrigerate it overnight. Just pop it in the oven in the morning.

  • Try adding sautéed bell peppers, spinach, or mushrooms for extra flavor and nutrients.
