Description

A simple and flavorful sauté of mushrooms and spinach, perfect as a side dish or light meal.


Ingredients

  • 8 oz mushrooms, sliced
  • 5 oz fresh spinach
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lemon juice (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add sliced mushrooms, cook 5–7 minutes until they release moisture and start browning.
  4. Season mushrooms with salt and pepper.
  5. Add spinach in batches, stirring until wilted, about 2–3 minutes.
  6. Drizzle lemon juice over the mixture and stir to combine (optional).
  7. Remove from heat and serve immediately.

Notes

  • Use a mix of mushrooms (e.g. cremini, shiitake) for extra depth.
  • Finish with a sprinkle of grated Parmesan for added flavor.
  • Can be made with butter instead of oil for richness.
