Description

Sausage Zucchini Boats are a delicious and comforting low-carb meal featuring tender zucchini halves filled with a savory Italian sausage mixture, topped with melted mozzarella and Parmesan cheese. Perfectly baked to bubbly perfection, this recipe offers a satisfying blend of flavors and textures for an easy weeknight dinner.

Ingredients

Scale

Vegetables

  • 4 medium zucchinis, halved lengthwise
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced

Meat

  • 1 lb Italian sausage (mild or spicy)

Other Ingredients

  • 1 cup marinara sauce
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Chopped parsley or basil for garnish (optional)

Instructions

  1. Prepare Zucchinis: Preheat the oven to 375°F (190°C). Using a spoon, scoop out the center of each zucchini half to create ‘boats,’ leaving about ¼-inch thickness around the edges. Arrange the zucchini halves in a baking dish.
  2. Cook Sausage Mixture: In a skillet over medium heat, cook the Italian sausage, breaking it up as it browns. Add the finely chopped onion and cook until softened, about 4–5 minutes. Stir in the minced garlic and cook for another 30 seconds. Drain excess grease if necessary. Add marinara sauce, Italian seasoning, salt, and pepper, then simmer the mixture for 2–3 minutes to blend flavors.
  3. Fill Zucchini Boats: Spoon the cooked sausage mixture evenly into each prepared zucchini boat. Top each with shredded mozzarella and grated Parmesan cheese.
  4. Bake: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake uncovered for an additional 5–10 minutes until the cheese is melted, bubbly, and golden.
  5. Garnish and Serve: Garnish with chopped parsley or basil if desired. Serve the zucchini boats warm and enjoy your flavorful low-carb dinner.

Notes

  • For a low-carb meal, serve with a side salad.
  • You can substitute the sausage with ground turkey, chicken, or plant-based meat for variety.
  • Adjust the level of Italian seasoning and salt to your taste preferences.
  • Use mild or spicy Italian sausage according to your heat preference.
