Description

These saucy Gochujang noodles are a spicy, savory, and slightly sweet Korean-inspired dish made with chewy noodles and a bold, flavorful sauce. Perfect for a quick weeknight meal.


Ingredients

  • 8 oz noodles (udon, ramen, or rice noodles)
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/4 cup water
  • 1 tbsp vegetable oil
  • 2 green onions, chopped
  • 1 tsp sesame seeds (optional)

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together gochujang, soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and water until smooth.
  3. Heat vegetable oil in a pan over medium heat. Add the sauce mixture and cook for 2-3 minutes until it thickens slightly.
  4. Add the cooked noodles to the pan and toss to coat evenly in the sauce.
  5. Cook for another 2-3 minutes until the noodles are heated through and coated well.
  6. Garnish with chopped green onions and sesame seeds if desired.
  7. Serve hot and enjoy!

Notes

  • Adjust the amount of gochujang to your preferred spice level.
  • Maple syrup can be used instead of honey for a vegan option.
