A creamy and flavorful salmon pasta dish that’s perfect for a quick yet elegant meal. Packed with tender salmon, al dente pasta, and a luscious garlic cream sauce.
Ingredients
- 8 oz (225 g) pasta (fettuccine or penne)
- 2 salmon fillets (about 6 oz each), skin removed
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup (120 ml) heavy cream
- 1/4 cup (60 ml) chicken or vegetable broth
- 1/4 cup grated Parmesan cheese
- 1 tbsp lemon juice
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season the salmon with salt and pepper, then cook for 4-5 minutes on each side until cooked through. Remove from the skillet and flake into large chunks.
- In the same skillet, add the chopped onion and cook until soft, about 3-4 minutes. Add the garlic and cook for another 1 minute.
- Pour in the cream and broth, stirring to combine. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened.
- Add the Parmesan cheese and stir until melted and the sauce is smooth.
- Return the flaked salmon to the skillet and stir gently to coat in the sauce.
- Add the cooked pasta and toss everything together until evenly coated. Adjust seasoning with salt, pepper, and lemon juice.
- Serve hot, garnished with chopped parsley if desired.
