- 1 can (14.75 oz) pink salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1 large egg
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- Vegetable oil, for frying
Instructions
- In a large bowl, combine salmon, breadcrumbs, onion, bell pepper, egg, mayonnaise, mustard, garlic powder, pepper, salt, lemon juice, and parsley.
- Mix until all ingredients are evenly incorporated and the mixture holds together.
- Form into 6–8 patties and place on a plate.
- Chill patties in the refrigerator for 15–20 minutes to help them firm up.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
- Fry the croquettes in batches for 3–4 minutes per side, or until golden brown and cooked through.
- Drain on paper towels and serve warm with your favorite sauce or a squeeze of lemon.
Notes
- You can substitute fresh cooked salmon for canned if preferred.
- For a healthier option, bake or air fry instead of pan frying.
- Serve with tartar sauce, aioli, or a simple yogurt dip.
