Ingredients
Scale
Main Ingredients
- 1 lb ground beef (lean, medium, or extra lean)
- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)
For Garnish (Optional)
- Diced tomatoes (reserved from the can)
- Freshly chopped parsley or cilantro
- Chopped green onions
Instructions
- Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add the 1 lb ground beef and break it apart with a wooden spoon. Cook until no pink remains and meat is cooked through, approximately 5 minutes. Drain any excess fat from the pan to keep the dip from being greasy.
- Add Seasoning and Rotel: Reduce heat to medium. Stir in 1 tbsp taco seasoning and the entire can of Rotel with juices. Cook for 2-3 minutes until fully combined and the sauce is simmering, allowing the flavors to meld together. Optionally, reserve 1 tbsp of the diced tomatoes and chilies to use as a garnish later.
- Melt the Cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously until the cheese is completely melted and smooth, creating a creamy, velvety texture that combines nicely with the beef mixture.
- Garnish and Serve: Optionally garnish the top of the dip with reserved diced tomatoes, chopped parsley or cilantro, and sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguette slices for dipping and enjoy this warm, cheesy appetizer!
Notes
- Choose lean ground beef to reduce excess grease in the dip.
- You can substitute taco seasoning with individual spices for control over flavor and salt content.
- Velveeta cheese melts smoothly providing the creamy texture, but processed cheeses like American cheese can also work in a pinch.
- Keep an eye on the cheese melting stage to prevent burning or curdling.
- This dip can be kept warm in a slow cooker on low for parties.
