Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Season the Potatoes: In a large bowl, toss the halved or quartered baby potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, dried thyme, salt, and black pepper to evenly coat them with the spices and oil.
  3. Roast the Potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast them in the preheated oven for 20 minutes to start cooking and crisping the potatoes.
  4. Prepare the Broccoli: While the potatoes are roasting, toss the broccoli florets in the remaining 1 tablespoon of olive oil and a pinch of salt to season.
